Eva's Zucchini Bread

3 Eggs

1 c Vegetable oil

2 c Granulated sugar

2 c Shredded zucchini

2 ts Vanilla

3 c Flour

1 ts Baking soda

1 ts Salt

1/2 ts Baking powder

1 ts Cinnamon

3/4 c Chopped walnuts

1 c Raisins (optional)

Beat the eggs. Add the oil and sugar, and mix well. Preheat the oven to 325 F. Grease and flour 2 bread pans. Mix all dry ingredients together, and add sugar/egg/oil mixture to it. Fold in the zucchini and nuts (also raisins, if used) Bake 1 1/2 hours.
